Southwestern Beef Bake

No-Stick Cooking Spray
2 pounds lean ground beef
2 jars (16 oz each) chunky salsa (2 jars = about 3-1/2 cups)
2 cans (2.25 oz each) sliced pitted black olives, drained
1 egg, slightly beaten
1 box (8-1/2 oz each) corn muffin mix
1 can (8.75 oz each) cream-style corn
1/4 cup squeezable margarine

  1. Preheat oven to 350°F. Spray 13 x 9-inch baking dish with cooking spray; set aside. Brown meat in large skillet over medium-high heat; drain. Stir in salsa and black olives. Spoon into prepared baking dish.
  2. Mix egg, muffin mix, corn and margarine in large bowl until well blended. Spoon evenly over beef mixture.
  3. Bake 30 minutes or until golden brown. Cut into 8 pieces to serve.
