Southwestern Beef Bake
No-Stick Cooking Spray
2 pounds lean ground beef
2 jars (16 oz each) chunky salsa (2 jars = about 3-1/2 cups)
2 cans (2.25 oz each) sliced pitted black olives, drained
1 egg, slightly beaten
1 box (8-1/2 oz each) corn muffin mix
1 can (8.75 oz each) cream-style corn
1/4 cup squeezable margarine
- Preheat oven to 350°F. Spray 13 x 9-inch baking dish with cooking spray; set aside. Brown meat in large skillet over medium-high heat; drain. Stir in salsa and black olives. Spoon into prepared baking dish.
- Mix egg, muffin mix, corn and margarine in large bowl until well blended. Spoon evenly over beef mixture.
- Bake 30 minutes or until golden brown. Cut into 8 pieces to serve.
