Years ago we ate the most unbelievable rice pilaf at a greek restaurant called “Souvlaki.” I am an older cook and I have spent a lifetime trying everything under the sun to create George Geronimos’ wonderful tasting rice pilaf. Restaurant was located in Alhambra, ca. What is the secret to his pungent and rich tasting rice?
You can try this tasty rice pilaf and see if it’s like the one you had.
Greek Rice Pilaf
1/4 lb butter
2 cups uncooked rice
1/2 cup fresh lemon juice
5 cups hot chicken broth
salt & freshly ground black pepper
Heat butter in a heavy skillet. When it's hot, add the rice and, stirring constantly, saute on medium heat until transparent but not brown.
Add the lemon juice, chicken broth, and salt.
Cover and simmer for 20 minutes.
Remove the pan from the heat and let pilaf stand uncovered for 5 minutes before serving.
Ive never tried that. Is that taste good.
I like it.
