Soy Tortillas Recipe
This recipe will make very low carb wraps for tacos, burittos and mini pizza. Use soy flower (used to bake) available at health food stores locally. An artificial sweetener of your choice.
In a mixing bowl use a teaspoon to measure out 6 teaspoons of Soy Flour. Add nutmeg or Cinnamon or other seasoning. One serving size pak of sweetener. and enough water to make a pancake like batter. On a paper plate place a piece of plastic wrap to cover. With a tablespoon drop 3 spoons of batter in the center. Place the plate in the microwave and set for high at three minutes.
As cooking begins you should see the batter puff up and spread over the plastic covered plate. Adjust cooking time on your microwave until the tortilla is done but not so hot that it melts the plastic. At the right setting the tortilla will seperate from the plastic and you can reuse the sheet. Set the tortilla on a paper towel to cool and finish drying. To make Taco shells place the hot tortilla over a wooden spoon handle to shape and cool. Store in a Zip Lock Bag. Good for Blintz also.
