Spaetzle

Here is my recipe for spaetzle.

2 eggs
1 c. milk
2 1/2 c. flour
1/2 tsp. salt

Mix all ingredients together. Drop into boiling water using a spaetzle maker. Cook for about 3 minutes. Drain.

To Use:

Add cooked spaetzles to chicken broth for a delicious chicken noodle soup. I always dice in a few fresh carrots.

Melt 1-2 tbl. butter in a frying pan. Add 1 slice of cubed bread. Brown the bread. Add cooked spaetzle and fry a bit. (A delicious side dish!) (1-2 cups of drained sauerkraut can also be added with the spaetzle in the frying pan.)

Add cooked spaetzles to a milk/chicken broth to which a few cubed potatoes and diced carrots have been added. This makes a wonderful knoephla soup.
