Spanish Style Liver


2 lbs. beef or calves liver
4 slices bacon, cut in half
1/2 c. chopped carrot
1/2 c. chopped celery
1 small onion, sliced
1 can (16 oz.) stewed tomatoes
1 t. salt
1/8 t. pepper
1 small bay leaf

Place liver in crockpot. Arrange bacon on top. Mix remaining ingredients and pour over liver. Cover and cook on low 6 to 8 hours. Remove bay leaf. Serves 5 to 6
