Sparkling Berry Salad
1 package cherry jello (large pkg)
2 cups cranberry juice
1/2 cup cold club soda
1 teaspoon lemon juice
1 cup blueberries
1 cup raspberries
1 cup sliced strawberries
Dissolve gelatin completely in cranberry juice. Stir in club soda, liqueur and lemon juice. Refrigerate until slightly thickened.
Stir in 2 cups of the berries. Spoon into 6-cup mold which has been sprayed with no stick cooking spray or a bowl. Refrigerate 4 hours or until firm.
Unmold. Garnish with remaining 1 cup berries.
