Speedy Spuds with Classic Chicken Topping
4 8-oz each potatoes
10 ounces chunk chicken in water – drained
3 green onions – sliced
6 tablespoons fat free mayonnaise
1/4 cup grated Parmesan cheese – divided
Pierce potatoes with tines of fork; microwave on HIGH 18 to 20 minutes until potatoes are fork-tender. Heat oven to 400Â°F. Meanwhile, to prepare topping: In bowl mix remaining ingredients except cheese. Cut potatoes in half lengthwise; place on baking sheet cut sides up. Cover potatoes with topping mixture, dividing equally. Place on baking sheet, sprinkle with cheese and heat in oven about 5 minutes until potatoes and topping are hot and cheese is melted.
