SERVES 4

Season and fry boneless steaks. Add 2 cans diced tomatoes (14.5 oz. each), salt, pepper and green beans. Cook; slice steaks. Add 8 oz. sour cream and cook 1 to 3 minutes longer. Serve over hot cooked noodles.

TOMATO FLORENTINE QUICHE
MAKES 6 TO 8 SERVINGS

1 pkg. (10 oz.) frozen chopped spinach, thawed, drained very well
1 can (14.5 oz.) petite diced tomatoes, drained
2 T. Italian seasoned bread crumbs
3 large eggs
1 c. half-and-half
4 slices bacon, crumbles
½ c. shredded mozzarella
½ c. shredded Cheddar
1 t. pesto seasoning or basil
¼ t. ground red pepper
1 unbaked 9-inch deep dish pie crust

Toss tomatoes and breadcrumbs. Combine spinach with eggs, half-and-half, bacon, cheeses and seasoning. Gently fold in tomato mixture. Pour into pie crust; place on baking sheet. Bake in preheated 350* F. oven 50 to 60 minutes. Let stand 20 minutes before cutting.
