Spicy Avocado Salad

1 large, ripe avocado, halved and pitted
1 ripe Roma or plum tomato, seeded and finely diced
1/2 green bell pepper, seeded and finely diced
1 scallion (spring onion), green and white part, thinly sliced
2 Tbs (30 ml) olive oil
The juice and grated peel of 1 lime
Salt and freshly ground pepper to taste
Cayenne pepper to taste

Place the avocado halves on a bed of lettuce on individual salad
plates. Combine the remaining ingredients in a small bowl and stir to
combine. Spoon the tomato mixture into the avocado halves and serve
chilled. Serves 2.
