Amount Measure Ingredient – Preparation Method


1 1/2 cups tomatoes – (fresh, peeled) finely chopped
1/2 cup yellow bell pepper – or green, finely chopped
1/2 cup scallion – finely chopped
1/2 cup cucumber – peeled and finely chopped
1/2 cup celery – finely chopped
1 large shallot – finely chopped, optional
leaves of several stalks celery – to taste, finely chopped
1 tablespoon fresh chives – finely chopped
minced fresh parsley – to taste
3 large basil leaves – finely chopped
1 large clove garlic – minced
3 tablespoons wine vinegar
2 tablespoons olive oil
salt and pepper – to taste, (use freshly ground black pepper)
1 tablespoon steak sauce
3 cups Bloody Mry Mix – Major Peter’s Hot & Spicy
fresh cilantro – finely chopped, to taste

Combine all ingredients in glass or stainless steel bowl. (Don’t use aluminum or anything that will react with the acidity!!) Chill several hours before serving!
You can add fresh herbs as you like, or omit any I have listed.
The keys to this recipe:

  1. The veggies must be very fine chopped
  2. Major Peter’s is THE best mix.
  3. Peak tomato season is the best time to make this! Select firm but very ripe tomatoes.

NOTE: For parties, add a splash or two of good vodka and serve in shot glasses for Bloody Mary Gazpacho Shots.
Garnish with fine chopped chives or parsley.
I put in just a little fresh cilantro…not much, but just enough for a subtle flavor to blend with the others!
This is the second summer I’m serving gazpacho shooters as a tray passed hors d’ oeuvre.
The guests love it.
I set a dozen shot glasses between acrylic ice on a tray, garnish rim of glass with lemon zest and a small triangle of avocado. The gazpacho has to be made more smooth than if you are eating it with a spoon.

I tried this and it’s very good, however, I added one jalapeno pepper as well as a bit of tabasco and worchestersire sauce. I always add about a half tsp. to a tsp. of granulated sugar to any tomato based soup, because it cuts the acidity and brings out the flavor of the tomatoes. The only thing I did differently was to use Zing Zang bloody mary mix. I think it’s a bit spicier. I serve this soup with crisp cheese toasts. A perfect Summer light supper.

Can you freeze this gazpacho and if so for how long? It looks great!
