Spinach and Cheese Squares
These nutritious nibblers can be made ahead of time. They can be refrigerated or frozen and then reheated at party time.

Serving Size: 2 squares
Ingredients:
large eggs, or 1/2 cup egg substitute - 2
whole-wheat flour - 6 tbsp
frozen, chopped spinach, thawed - 1 (10 oz)
low-fat cottage cheese - 2 cups
reduced-fat Cheddar cheese - 2 cups
fresh ground black pepper - 1/2 tsp
cayenne pepper - 1/8 tsp
nutmeg - pinch
wheat germ - 3 tbsp

In a large bowl beat the eggs with the flour until the mixture is smooth.

Add the spinach, cheeses, cayenne, and nutmeg, and mix the ingredients well. Pour mixture into a nonstick coated 13 x 9 x 2 -inch baking pan.

Sprinkle the top with wheat germ and bake at 350 degrees F for about 45 minutes.

Let stand for about 10 minutes and then cut into 1 1/2-inch squares for serving.
