SPINACH AND ORANGE SALAD WITH POPPY SEED DIJON VINAIGRETTE
Makes 6 servings
Ingredients:
Salad
8 cups torn spinach
2 (11 ounce) cans mandarin orange segments, drained
1/2 cup sliced red onion
1 (4 oz.) package crumbled feta cheese
1/3 cup slivered almonds, toasted
1 cup prepared Poppy Seed Dijon Vinaigrette (see recipe below)
Dressing
1/2 cup orange juice
2 T. olive oil
1/3 cup red wine vinegar
1 T. poppy seeds
1/4 cup Grey Poupon Dijon Mustard
For Salad: Toss spinach, oranges, onion, cheese and
almonds in a large bowl. Pour salad dressing over spinach
mixture; toss to coat.
For dressing: Whisk orange juice, vinegar, mustard, oil and
poppy seeds in small bowl. Serve immediately or cover and
store in refrigerator for up to 1 week.
