Spinach & Bacon Quiche

10-oz. pkg. frozen chopped spinach, thawed
4 eggs, beaten
1-1/2 c. half-and-half
1.8-oz. pkg. leek soup mix
1/4 t. pepper
10 slices bacon, crisply cooked and crumbled
1/2 c. shredded mozzarella cheese
1/2 c. shredded sharp Cheddar cheese
9-inch frozen pie crust, unbaked

Drain spinach between layers of paper towels; set aside. Whisk eggs, half-and-half, leek soup mix and pepper together in a medium mixing bowl; stir in spinach, bacon and cheeses. Pour into frozen pie crust; place on a baking sheet and bake at 375 degrees for 35 to 40 minutes, or until a knife inserted into center comes out clean. Makes 8 servings
