Spinach Pie

1 10 oz Package Frozen Chopped Spinach
1/2 Cup Chopped Onion
2 Cloves of Garlic (Minced)
1 Tbls Butter or Margarine
6 Beaten Eggs or Subsitute Egg Beaters
1/3 Cup Skim Milk
1 Cup Shreaded Mozzarella Cheese
1/2 Tsp Dried Marjoram (Crushed)
1/4 Tsp Dried Basil (Crushed)
Non-Stick Vegetable Spray Coating
1/4 Cup Wheat Germ

Thaw Spinach, drain well.

In a sauce pan cook onion and garlic in butter or margarine till tender
but not brown. Set aside.

In a large bowl combine eggs and milk. Stir in the well drained
spinach, 2/3 cup of the cheese, the marjoram, basic, 1/4 tsp salt, and 1/4
tsp pepper. Stir in cooked onion and garlic.

Spray a 9-inch pie plate or shallow quiche dish with non-stick
vegatable spray coating. Sprinkle wheat germ over bottom and up the sides of
the pie plate or quiche dish.

Turn spinach - egg mixture into pie plate or quiche dish.

Bake uncovered in a 350 degree over for 25 to 30 minutes or until knife
inserted into center comes out clean. Sprinkle with remaining cheese.
Bake 3 minutes more or until the cheese has melted. Cut into wedges to
serve.
