Spinach with Sautéed Mushrooms

(4 servings)

2 small onions, chopped
2 tbsp butter
2 lbs fresh spinach
1 cup sliced mushrooms
2 tsp lemon juice
1 tsp salt
3/4 tsp sugar
1/8 tsp freshly ground pepper

Sauté onions in 1 tbsp butter.

Wash spinach and cut off and discard root ends and any tough stems. Chop spinach coarsely and add to onions. Cover and cook over medium heat for 10 minutes.

Saute mushrooms in lemon juice and remaining butter. Add to spinach along with seasonings. Toss lightly. If desired, garnish with additional sautéed sliced mushrooms. Serve immediately.
