(taste like bread & butter pickles)
4 qts. sliced squash(about 6 lbs.)
4 med. onions sliced
2 green bell peppers
1/2 cup salt
5 cup sugar
3 cup vinegar
1-1/2 tsp. turmeric
1-1/2 tsp. celery seed
2 tbls. mustard seed
Sprinkle 1/2 cup salt over squash onions and pepper. cover with ice water and let stand 3 hrs. combine sugar vinegar turmeric celery seed and mustard seed. Bring to a boil, drain squash pepper and onions. Add to boiling mixture and heat to boil. Don’t cook this mixture… just allow it to get hot. Put in jars and seal.
This is a wonderful pickle that u can eat with anything. Most people would not know it was squash if you don’t tell. Taste just like bread and butter pickles.
