St. Patrick’s Day Lucky Charms Crispy Treats

• 1/4 cup butter or margarine
• 36 large marshmallows
• 3 1/2 cups of crisp rice cereal (such as Rice Crispies)
• 2 1/2 cups of Lucky Charms cereal
• 1/4 tsp vanilla Extract (optional)
• Green food coloring (optional)
• Non-fat butter-flavored cooking spray

-Melt butter in large microwaveable bowl for 45 seconds or until melted.

-Add the marshmallows, and use the wooden spoon to the coat them. Microwave on high for 1-1/2 minutes or until marshmallows are melted.

-If desired, add 1/4 teaspoon of vanilla extract and stir in.

-If you’d like your treats to be green, add a few drops of green food coloring to the marshmallow mixture and stir until the entire batch is a uniform color again.

-Add the rice crisp cereal and stir quickly, but gently, until the marshmallow is completely and evenly coating the cereal.

-Add the Lucky Charms cereal (including the colorful marshmallows) and gently fold and stir it into the rest of the crispy rice cereal and marshmallow until all ingredients in the pot are evenly coated.

-Spray your pan with the non-fat butter cooking spray

-Spoon the cereal/marshmallow mixture into your pan and use the wooden spoon to press it out to the sides, evenly.

-Let it cool for 30 minutes or so, and then slice into pieces of the desired size.
