String and Wax Beans Bundles
Comments: *To serve, use scissors to open-up the bundles.
1 1/2 cups [375 mL] fresh string beans 1 1/2 cups [375 mL] fresh wax beans 1 tablespoon [15 mL] tamarind sauce 2 tablespoons [30 mL] olive oil 1 green onion, chopped 4 tablespoons [60 g] butter 6 fresh basil leaves, minced Salt and pepper, to taste Preheat barbecue. Rinse then break-up ends or fresh string and wax beans. Mix together tamarind sauce, olive oil and chopped green onion into a bowl. Add beans and leave to marinate for 10 minutes. Salt, pepper, drain then arrange beans into 2 al foil bundles. Finely dice butter; add to beans along with freshly minced basil before closing the bundles. Barbecue onto upper barbecue rack for 7 to 8 minutes. Unwrap* before serving.
