Stuffed Cabbage Casserole

1 pound ground beef
1 small onion, chopped
4 cups chopped cabbage
1 medium green pepper, chopped
1 cup uncooked instant rice
1 cup water
1 6 ounce can tomato paste
1 12 1/2 can diced tomatoes, undrained
1/2 cup ketchup
2 tablespoon vinegar
1 to 2 tablespoons sugar, optional
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder

In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a slow cooker; add cabbage, green pepper and rice.

In a bowl, combine the water and tomato paste. Stir in the remaining ingredients. Pour over beef mixture; mix well.

Cover and cook on low for 4 to 5 hours or until rice and vegetables are tender.

Makes 4 to 6 servings.

Have joined today just to try this stuffed cabbage casserole.

I joined the forum a few minutes ago. I have so many vegetables in my fridge, including 2 heads of cabbage and a few pounds of ground chuck which I must use and I didn’t have an idea on how to use up all these things. So, in the next few days I will definitely try making this recipe which sounds easy and yummy. That’s of course if you like cabbage which I do. I was at a point that, although I am very thin, I had read about a cabbage soup to lose weight and I was about to make it. So, now I will be safe without the need to go to extremes. Thanks for posting the recipe. I will let you all know how it went.

Well, I tried this last night. I have to be honest, I didn’t care for it. I followed the recipe to the letter. I really wanted to like it too. :sad:

What was your objection to it?

I made this last week but I kinda messed it up…HA…I didn’t have time to mess with the crock pot so I made it on top of the stove in my dutch oven. Here’s where I messed up, I put in one cup of regular rice and added quite a bit of extra water…2 cups at first of extra water. The rice kept soaking up and soaking up and expanding and expanding and I kept adding more water.

OK so when I make this again, I’m going to cook it in a dutch oven again and totally leave out the rice. Then when it’s almost done I’m going to put in about a cup of already cooked rice. OR I’m just going to serve it over cooked rice. But I’ll tell ya, my picky husband really did like it served over mashed potatoes…HAAHAA!

I will make it again and maybe even in the crock pot…HA! :slight_smile: I didn’t change anything except the rice(and more water)…it has a very good flavor to it.

It was a tad bit sour, maybe if I had put in more sugar to taste. it was EZ to fix tho.

Just simply cut back on the vinegar, taste and adjust the sugar.
