Stuffed Dates

Reading a BLOG on another site, I saw a recipe for Cranberry Stuffed Dates. It reminded me of something from my childhood. (I’m 64 now.) They were Stuffed Dates stuffed with cream cheese and ?. I have NO idea what else was included. Anybody have any recipe like that?

Thom - was it cream cheese or mascarpone? Either is usually used in stuffing dates. A squeeze of fresh lemon juice and some chopped pistachios works well.

Try stuffing a date with an almond, place goat cheese over that and wrap in bacon; bake at 350 12 - 15 min. till done.

You can use pecans or walnuts as well.

Cranberry Stuffed Dates

* 4 ounces cream cheese, softened
* 1 Tablespoon granulated sugar
* 1 teaspoon vanilla
* 1 Tablespoon fresh orange juice
* 1 teaspoon orange zest, finely grated
* 2 Tablespoons dried cranberries, finely chopped
* 16-18 large dates, pitted and split
* 2 Tablespoons pecans, finely chopped

In a medium bowl combine the cream cheese, the sugar, the vanilla, the orange juice and the orange zest. Beat until well combined and smooth. Stir in cranberries. Stuff each date with the cream cheese mixture and sprinkle with chopped pecans. Transfer to a serving plate. If desired, garnish plate with strips of orange peel.
