STUFFED GREEN PEPPER SOUP
2 lb. ground beef
2 qt. water
1 (28 oz.) can diced tomatoes (undrained)
1 (29 oz.) can tomato sauce
2 C. cooked long-grain white rice (1/2 C. uncooked)
2 C. chopped green bell pepper (about 2 large peppers)
2 beef bouillon cubes
2 T. packed brown sugar
2 tsp. salt
1 tsp. pepper
In 6-quart saucepan or Dutch oven, brown beef; drain. Add remaining
ingredients; bring to boil. Reduce heat; cover and simmer for 30 to 40
minutes or until tender.
Makes about 16 servings.
