Stuffed Onion


1 pound bacon, chopped
1 pound cremini mushrooms
2 bunches leeks
2 1/2 cups crumbled bleu cheese
2 cups bread crumbs
1/2 cup cream
1/2 cup milk
4 eggs beaten
6 to 8 onions

Sauté the bacon over medium heat until crisp. Remove bacon and drain the fat. Add the leeks and mushrooms to the pan and sauté until limp. Add the bleu cheese and stir to melt slightly. Remove from the heat and combine with the remainder of ingredients.

Trim top off onions. Cut a thin slice off bottom of onions so they sit level. Hollow out, removing all but the three or four outer layers.

Stuff hollowed-out onions with stuffing. Bake in 350-degree oven for about 35 minutes. Makes six to eight servings.
