Stuffed Pita bread for a healthy lunch

2 Large Pita bread cut into two

Stuffing:

1-1/2 cups cooked chicken breast meat, diced
2 pcs hard boiled eggs, chopped
2 tbsp. minced spring onion
2 tbsp. minced parsley
2 tbsp. choped red pepper
2 tbsp. chopped cucumber
1/4 cup mayonnaise
1/2 tsp. fine salt
Dash of pepper powder

Divide the above into four portions and stuff the above ingredients into the tiangle shaped pita bread. Put into oven toaster and bake for 4 or 5 mins.
Serve immediately with sliced tomatoes and lettuce.
