Subing honey for sugar and egg white instead of whole egg

I saw on the biggest looser this week a cupcake demo. The cupcake had 100calories. He substituted wheat flour for regular flour. Egg whites in stead of eggs and honey instead of sugar. Would anyone happened to know where to find the ratio honey would be to sugar? Also if you are just using egg whites do you need to do more eggs to make up for no yoke?
