Sublime Bruschettas

Comments: Bread slices can also be browned on a hot barbecue rack.

Ingredients Preparation

8 to 10 fully ripe tomatoes
2 tablespoons [30 mL] minced green onion, white part only
2 large cloves garlic, minced
1/4 cup [60 mL] freshly [a must] chopped basil
2 teaspoons [10 mL] red wine vinegar
6 tablespoons [90 mL] oil
Salt and pepper, to taste
4 thick slices crusty Italian bread



Half tomatoes; squeeze to remove seeds and juice.
Into a bowl, finely dice tomato halves.
Mix in minced green onion and garlic, freshly chopped basil, red wine vinegar and half of oil; salt and pepper to taste.
Leave at room temperature for 1 hour.
Preheat oven broiler.
Drain accumulated liquid from tomato mixture.
Broil bread slices until golden brown on both sides.
Quickly brush one side of each slice of bread with remaining oil.
Garnish with tomato mixture, half each slice of bread, and serve.
