Sugar Substitute Easy Breezy Cheesecake

3 TBSP graham cracker crumbs
1/2 cup water
2 envelopes unflavored gelatin
1 lb. Neufchatel cheese (2-8 oz. pkg.)
1 lb. low fat Ricotta cheese
juice and grated zest of 1 lemon
2 tsp. vanilla extract
10 packets Sweet Thing® Aspartame Sugar Substitute
or 5 packets Sweet Thing® Granulated Sugar Substitute
fresh fruits (garnish)

Spray an 8-inch round springform pan well with a non-stick spray, then dust pan lightly with the graham cracker crumbs. Soften the unflavored gelatin in the water for 5 minutes, then cook over low heat, stirring constantly, until the gelatin has completely dissolved. Remove from heat and cool slightly. Beat the Neufchatel cheese with the Ricotta cheese until smooth.

Add the gelatin, the juice and the grated zest of the lemon, the vanilla extract and the Sweet Thing®. Blend until very smooth. Pour mixture into the prepared springform pan. Cover and chill until firm.

To serve, loosen rim of pan, remove and slice cheesecake into wedges. Top or garnish each wedge with fresh fruit. Recipe yields 8 servings.
