These can be enjoyed as a snack or on a salad. They also make a great hostess gift
8 cups water
4 cups walnut halves or pieces
1/2 cup firmly packed brown sugar
vegetable oil
1/4 tsp salt
Bring water to a boil in a large saucepan. Add walnuts and boil 1 minute; drain well. Combine walnuts and brown sugar in a bowl; stir until sugar melts.
Pour oil to depth of 1 inch into a large heavy skillet; heat to 320F. Fry walnuts in two batches for 2 minutes each. Drain on a rack over paper towels. Sprinkle with salt.
Yields 4 cups
