Sun Dried Tomato Basil Dip
1/2 cup mayonnaise
1 teaspoon finely chopped fresh basil
1 teaspoon finely chopped garlic
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 dried tomato halves – snipped into thin strips
8 ounces sour cream
Soak dried tomatoes in hot water until soft, about 10 minutes; drain.
In food processor bowl, process tomatoes until finely chopped. Transfer to bowl. Add all remaining ingredients; mix until blended.
Cover and refrigerate at least 1 hour to allow flavors to blend. Serve with French-fried potatoes or roasted potato wedges.
