Sweet And Pungent Pork


2 lbs. lean pork, boneless, cut into 1 to 1 1/2-inch cubes
1/4 c. butter or margarine
1 medium onion, peeled, quartered and sliced
1/2 c. green bell pepper, cut
1/3 c. brown sugar, firmly packed
1 t. salt
1/4 t. pepper
1/2 t. coriander
1/4 t. cinnamon
1/2 c. lemon juice
1 t. soy sauce

Brown pork on all sides in skillet; transfer to crockpot. Add remaining ingredients except for soy sauce. Cover and cook on LOW 6 to 8 hours. Stir in soy sauce before serving.
