Sweet and Spicy Pineapple-Carrot Salad
2 cups 1/2-inch pineapple chunks
2 cups shredded carrots
1 tbsp orange marmalade
1 tbsp canola oil
1 tbsp white wine vinegar
1/8 tsp chipotle chile powder or 1/4 tsp curry powder
1/8 tsp salt
1/8 tsp pepper
Combine pineapple and carrots in a large serving bowl
Stir together marmalade, oil, vinegar, chipotle chile powder, salt and pepper in a small bowl. Pour over pineapple mixture, mixing well.
