SWEET PICKLED ASPARAGUS
MAKES 5 QUARTS

10 lbs. fresh asparagus
5 T. dill seed
5 t. mixed pickling spices
2 quarts water
3 c. cider vinegar
2/3 c. sugar
¼ c. canning salt

Wash, drain and trim asparagus; cut into 5 ¾-inch spears (discard ends or save for another use). Pack into 5 1-quart jars to within ½-inch of top. Place 1 T. dill seed and
1 t. pickling spices in each jar. Bring water, vinegar, sugar and salt to boil. Ladle over asparagus, leaving ¼-inch head room. Adjust caps. Process 20 minutes.
