this is a great holiday side dish. serves: 8. 3 1/2 pounds of sweet potatoes, 2 tsp butter, 1cup chicken stock, salt and pepper to taste,2 tsp ground cinnamon, 2large bananas thinly sliced on an angle, 1/4 cup dark brown sugar, 1 cup of pecans, 1 tbsp butter and 2 tbsp dark brown sugar. preheat oven to 350 degrees, place sweet potatoes on a backing sheet and roast until tender, about 1 hour. remove from oven and let cool enough to handle. keep oven at 350 degrees. peel and mash in bowl until smooth. stir in 2 tsp butter, chicken stock, cinnamon, salt and pepper to taste. transfer to the casserole dish. in a sauce pan toast the pecans on medium heat for about 10 to 15 minutes or until toasted. then turn heat down to low and 1 tbsp butter and 2 tbsp brown sugar until sugar is melted and coats the pecans. place pecans over sweet potatoes and then slice bananas and place them over the pecans. sprinkle 1/4 cup of brown sugar over the bananas. bake for 20 minutes or until the top is brown.
