Sweet Potato Muffins
1/2 cup margarine
1 1/4 cup white sugar
1 1/4 cup sweet potatoes (cooked and mashed)
1 1/2 cup flour
1/4 tsp. each salt and nutmeg
2 tsp. baking powder
1 tsp. cinnamon
1 cup milk
1/4 cup each pecans, raisins
Cream margarine, sugar, eggs, sweet potatoes.
Sift together flour,salt, nutmeg, baking powder and cinnamon and add
to other mixture. Add milk slowly until well mixed. Fold in chopped
pecans and raisins.
Drop by tablespoonfuls into lightly sprayed muffin tins
Raisins should be soaked in hot water for 1/2 hour and drained before
