Sweet Surprise: Simple Chocolate Eclair Recipe
Layer the bottom of a 13x9x3 inch pan with graham crackers.
Combine in a mixing bowl 1 8-oz. package white chocolate or vanilla flavor pudding mix, 1 1/2 cups cold milk, 8 oz. thawed whipped dairy topping, and 1 cup heavy whipping cream. Blend well with a whisk. Layer half the cream-pudding mixture over graham crackers. Top with a second layer of crackers, then remaining cream-pudding mixture. Top with a third layer of graham crackers.
Soften (microwave on medium at 15 second intervals) 16 ozs. ready-made chocolate fudge frosting. Over low heat in a double-boiler, melt 2 squares (2 oz. total) unsweetened baker’s chocolate. When melted, shut off heat and add 1/2 cup chocolate syrup and 1/2 cup heavy whipping cream; Blend well. Add warmed frosting and stir together well.
Frost top layer of graham crackers with chocolate mixture. Refrigerate at least four hours. Enjoy!
