T-Bone Steaks w/ 3 Pepper Rub and Bourbon Sauce
MAKES 4 SERVINGS
3 Pepper Rub:1 Tbsp black pepper
1 Tbsp white pepper
1 Tbsp sweet paprika
1 Tbsp garlic powder
2 Tsp salt
1 cup beef stock or low sodium beef broth
1 Tbsp cornstarch
2 Tbsp bourbon
1 Tbsp Dijon mustard
1 Tbsp tomato paste
1 -2 dashes Tabasco sauce salt
4 T-Bone steaks, 1 1/2 inches thick
3 Pepper Rub:
Mix pepper, paprika, garlic powder, and salt in a small bowl. Sprinkle generously on both sides of steaks and press into meat. Cover and let sit.
Prepare charcoal or gas grill for direct grilling over medium-high heat.
Reduce stock in small saucepan by half. In a small bowl stir cornstarch into the bourbon. Remove stock from heat and whisk in mustard, tomato paste, cornstarch mixture and tabasco. Taste and season with salt. Set aside.
Grill steaks directly over medium-high heat, turning once, 4-7 minutes each side. Check for doneness. Transfer to a platter and cover.
Over medium heat, reheat the bourbon sauce to serving temperature, whisking constantly. Spoon sauce over steaks and serve.
