Taco Bake
A different twist on tacos - baked in a pie pan. Crushed corn chips add flavor and chewiness to the yeast crust. Serve wedges topped with cheese, lettuce, and tomatoes.
Makes 1 taco pie.
2/3 cup Water
2 tablespoons Oil
2 teaspoons Onions, finely chopped
1 tablespoon Sugar
3/4 teaspoon Salt
1/2 cup Corn chips, coarsely crushed
2 cups Bread flour
2 1/4 teaspoons Active Dry Yeast
– Meat Filling –
1 pound Lean ground beef
1/2 cup Onions, chopped
1 package Taco seasoning
3/4 cup Water
– Topping –
1 cup Cheddar cheese, shredded
1 cup Lettuce, shredded
1 1/2 cups Tomatoes, chopped
– Bread Machine Method –
Have liquid ingredients at 80º F and all others at room temperature. Place crust ingredients in pan in the order specified in your owner’s manual. Select dough/manual cycle. Check dough consistency after 5 minutes of kneading, making adjustments if necessary.
– Mixer Methods –
To make crust, combine yeast, 1 cup flour, and other dry ingredients. Combine liquids and heat to 120 to 130º F.
– Hand-Held Mixer Method – - Combine dry mixture and liquid ingredients in mixing bowl on low speed. Beat 2 to 3 minutes on medium speed. By hand, stir in enough remaining flour to make a firm dough. Knead on floured surface 5 to 7 minutes or until smooth and elastic. Use additional flour if necessary.
Stand Mixer Method - Combine dry mixture and liquid ingredients in mixing bowl with paddle or beaters for 4 minutes on medium speed. Gradually add remaining flour and knead with dough hook(s) 5 to 7 minutes until smooth and elastic.
– Food Processor Method –
Put dry mixture in processing bowl with steel blade. While motor is running, add liquid ingredients. Process until mixed. Continue processing, adding remaining flour until dough forms a ball.
Rising, Shaping, and Baking
Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until dough tests ripe. Place dough in a well-greased 10-inch pie pan. (A deep dish pie pan or quiche pan may also be used.) Let rise 10 minutes. Prepare Meat Filling by browning ground beef with onions. Drain; add taco seasoning and water. Simmer 10 minutes. Spread meat filling over crust. Bake in preheated 375º F oven for 30 to 35 minutes or until edge is crisp and golden brown. Sprinkle with cheese, lettuce, and tomatoes. Serve immediately.
