Taco Salad
Makes 4 servings
12 oz. lean ground beef or pork
1/2 cup chopped onion
3/4 cup taco sauce
1/2 tsp. ground cumin
1 can (15 oz.) red kidney beans
1 can (4 oz.) diced green chili pepper
1 small green bell pepper, cut into thin bite-size strips
6 cups torn mixed greens
2 medium tomatoes, chopped
1 cup shredded cheddar cheese
Taco sauce for topping, optional

Into the colander insert of the Meals in Minutes™ Family-Size Microsteamer, crumble meat. Add the onion and place the colander into the bottom dish of the Microsteamer. Cover and microwave on High 4-6 minutes, stirring once, until meat is no longer pink.

Wipe out bottom dish of Microsteamer. In bottom dish, combine meat mixture, taco sauce and cumin. Drain beans in colander insert; rinse and drain again. Stir in chili peppers with their liquid, and bell pepper strips. Place the colander into the bottom dish. Microwave on High 4-6 minutes, until pepper strips are tender and meat is hot.

Stir bean mixture into meat mixture. Place greens on 4 plates. Divide meat mixture among plates. Sprinkle with tomatoes and cheese and top, if desired, with additional taco sauce.
