4 to 5 medium russet potatoes
1/4 cup vegetable oil
1 (1 1/4 ounce) envelope taco seasoning mix
3 tablespoons cornmeal
Preheat the oven to 450 degrees F.
Pierce the potatoes with a fork and place in the microwave. Microwave
for 6 minutes, or until barely tender. Cut the potatoes into large
cubes and place in a large mixing bowl; toss with vegetable oil.
Combine the taco seasoning and cornmeal in a large plastic sealable
bag. Place the potatoes in the taco seasoning bag and shake to coat.
Place on an ungreased baking sheet. Bake 8 minutes, or until golden
