Tex-Mex Casserole
Butter 9x13 pyrex pan. Layer corn tortillas on bottom and up the sides. OK to tear in two.
Prepare in frypan: Brown l lb ground beef, 1 chopped onion, small green pepper (optional), and one-half to entire package of Taco Seasoning. Drain fat and add 3/4 cup salsa, 1 15 oz can of tomato sauce, 1 can of corn drained. Simmer 2 mins.
Grate two cups cheddar cheese.
Put one-half beef mixture into tortilla prepared pan and sprinkle with cheese. Layer another tortilla layer and more beef mixture, more cheese, lay tortillas on top-a little more sauce and cheese. Cover and bake at 350 degrees for 35 to 45 mins. Serve with tossed salad.
