Texas Lasagna

I am a member of our grub grannies at church and this is a great recipe to make if you want lots of leftovers or if you are having a lot of people over. I like to serve it with corn chips and dip them in it.

1 1/2 pound ground beef
1 C. chopped onion
2 cloves minced garlic
2 cans chili beans slightly drained
1 can cream of chicken soup
1 can cream of mushroom soup
1 can red enchilada sauce
1 can diced tomatoes and green chilies (rotel)
12 flour tortillas
2 C. shredded cheese (or more if you like)

preheat oven to 350 degrees. spray 9X13 pan with cooking spray. in a skillet brown ground beef, drain and add onion and garlic until onion is clear. stir in chili beans, soups, enchilada sauce and rotel together. spread a small amount into bottom of pan. tear tortillas into 4’s and layer on top of mixture. spread 1/3 of mixture on next layer and layer it with tortillas the same way. Repeat once more and then bake in oven 40 minutes. remove from oven and sprinkle cheese on top and bake about 3-5 minutes or until cheeses is melted.

I have a large family and this makes great leftovers. or Lunch for the next day.
