Texas Two Step Burger
2 pounds. ground beef,formed into 6 patties
6 slices cheddar cheese
6 slice Monteray cheese
2 cups chili
1 small red onion,sliced thin
Romaine lettuce,sliced thin
Cilantro-lime-chipotle cream sauce,recipe follows
olive oil for brushing on buns
salt and pepper
1 1/2 cups sour cream
1 Tbsp. lime juice
1 Tbsp. chipotle peppers in adobo,minced
2 Tbsp. finely chopped cilantro
Prepare sauce 1-2 days in advance.
Mix the sour cream, lime juice, chipotles and cilantro in a bowl. Cover and
Heat grill to med. high. Place burgers on grill and cook till 3/4 done.
Turn over burgers and top with the cheeses.
Brush buns with olive oil and place on grill, cook till golden. Warm chili
in microwave or stove top.
Put Romaine on bottom bun then top with the burger,chili,onion and sauce.
Extra napkins are recommended.
