Dinner tonight will be Easy Swiss Steak (recipe follows), garlic mashed potatoes, green beans Italiano, homemade yeast rolls, fruit compote and apple juice w/club soda.
Easy Swiss Steak
1 large round steak (pounded/tenderized)
1 large onion, sliced
2 beef bouillon cubes
2 cups warm water
Salt/pepper to taste
1 large can crushed tomatoes
Preheat oven to 325 degrees. Cut steak into serving size portions. Arrange steak in roasting pan. Place sliced onion on steak and sprinkle with salt and pepper. Dissolve bouillon cubes in water and add to pan, cover and bake 45-50 minutes. Uncover and drain broth; pour tomatoes over steak. Recover and bake for 1/2 hour more.
