Chicken Cashew Pasta Salad

Ingredients:

2 cups pasta shells
1/4 c. brown sugar
1 c. mayonaise
2 teaspoons lemon juice
1 tablespoon distilled white vinegar
1 pinch of salt
2 cups chopped celery
1/2 cup green bell pepper
1 small onion, chopped
3 chicken breasts cooked and cubed
1 c. cashew halves
2 teaspoons fresh chopped cilantro

  1. Bring large pot of lightly salted water to boil. Add pasta and cook 10 min. Drain and rinse in cold water and set in fridge.
  2. In large bowl, combine brown sugar, mayonaise, lemon juice, vinegar, and salt.
  3. Toss dressing mixture with cooked chicken, cold pasta from fridge, celery, green pepper, onion, and cilantro. Chill until ready to serve. Top each serving with cashews. Do not put cashews in pasta until ready to eat because they will get mushy.
