This is one of mine that was published in Sunset Magazine a few years ago
It is so easy and the gravy is very delicious!
Use any size rump roast or other cut that is easily sliced(not chuck)
2 medium white onions, thickly sliced
cooking oil
1 can any beer
water
1 pkg Knorr Tomato Beef Soup Mix( was Oxtail Soup Mix)
Heat about 2Tbls oil in a Dutch oven and sear beef on all sides and then remove beef to a platter
Add onion slices to pan and saute until soft and transparant
Return beef to pan
Pour in the beer then fill beer bottle/can with water and add to pan
Stir in the pkg of soup mix
Cover Dutch oven and cook on stove top for about 2 hours or until meat is done
For more gravy, more beer and water could be added. When I make this for my grandkids, I substitute Root Beer for the beer, which also make an incredible gravy…just a little sweeter.
Serve with mashed potatoes and veggie of chioce, crusty bread & salad

After searing the roast, could you just use a slow cooker; if so, would the ingredient totals change; and how long do you think, at a low setting would this take to finish? I’d really like to try a slow cooker approach! Thanks for a great post and I look forward to your slow cooker ideas!
Hi BMan, The slow cooker is a great idea. You might want to cut back a little on the water as you will have the residual liquid from the lid of your crock pot. Or you could go with the recipe and if the gravy is not thick enough toward the end, just leave the lid askew to let some of the liquid evaporate. It really depends on how you like your gravy. Depending on the size of your crock pot and the size of the roast, I would let it cook on low for 8 to 9 hours for a 2-3 lb roast in a 4-5 qt crock pot and 10-12 hours on low for a 4-6 lb roast in a 5-6 qt pot. I have used an electric pressure cooker for this recipe and it only take about 40 minutes of cooking time. The aroma is wonderful while it cooks and the gravy is so good, I have actually caught a couple of my friends drinking it from a mug. Have fun and enjoy…let me know if you make it and what you think.
