The Day After Turkey Sandwich

As we all know we have a lot of leftovers the day after Turkey day. Well here is a neat way to use some of those leftovers up we have had this several times during the holiday season over the past years. This is very good to.

1/3 cup mayonnaise
1 Tbsp sugar
1 Tbsp. apple cider vinegar
2 1/2 cups slaw mix
2 Tbsp. minced fresh parsley
8 Tbsp. cranberry sauce, divided
8 slices rye or wheat bread, buttered on one side
8 slices Swiss cheese, divided (4-oz.)
8 oz. roast turkey sliced thin, divided
Salt and cayenne to taste

Preheat a griddle or large nonstick skillet to medium.

Whisk mayonnaise, sugar, vinegar, salt and cayenne together in a bowl. Stir in coleslaw and parsley, set aside.

Assemble sandwiches by spreading 1 Tbsp. cranberry sauce on the unbuttered side of each slice of bread. Top each with a piece of cheese, then arrange turkey on 4 slices of bread, top each with 1/4 cup coleslaw. Place remaining bread on the slaw, buttered side up.

Grill sandwiches, by pressing them lightly with the back of a baking sheet. Cook until golden brown on one side, about 2 minutes, flip and grill until bread is toasted and the cheese has melted.
