The Great One’s Chili Con Carne
Chili recipe from entertainer Jackie Gleason.
1 cup thinly sliced onion
3 tablespoons vegetable or canola oil
4 (14- to 16-ounce) cans tomatoes
3 or 4 (14 1/2 ounce) cans kidney beans
4 tablespoons chili powder
2 tablespoons sugar
Salt, to taste
Pepper, to taste
4 garlic cloves, peeled
10 strips bacon
2 pounds ground round
Sauté onion in the oil until tender. Add tomatoes, beans, chili powder, sugar, salt, pepper and garlic.
Fry bacon until crisp. Remove bacon, crumble and reserve. Brown ground round in the bacon drippings.
Add the meat to the tomato mixture. Add the crumbled bacon and simmer about 2 hours.
Remove the garlic cloves and serve.
