Thousand Island Relish

Can be eaten immediately.

7 large cucumbers, peeled
4 large carrots
6 large onions
1 green pepper
1 sweet red pepper
¼ cup coarse salt

3 cups white sugar
½ cup flour
3 Tbsp dry mustard
1½ tsp tumeric
1½ tsp mustard seed
1½ tsp celery seed
3 cups white vinegar
1 cup water

Chop vegetables, or put through coarse blade of food processor. Sprinkle with salt and add 2½ cups water. Let stand one hour. Drain well.

Mix together sugar, flour, mustard and all spices in a heavy saucepan or pot. Stir in vinegar and water. Gradually add drained vegetables. Bring to a boil; turn down heat and simmer 1 hour, stirring often. Pack in sterilized jars.
