Three Kinds of Glazes for Turkey

Bourbon Molasses Glaze:

2/3 cup Bourbon
1/2 cup molasses
1/2 cup apricot preserves
pinch salt

Combine all ingredients in a saucepan over medium high heat, boil 5 to 7 minutes or until reduced to 1 cup, stirring occasionally. May be prepared up to 3 days in advance.

Makes 1 cup

Citrus Honey Glaze:

4 Tbsp. butter
1/2 cup honey
Zest of an orange, lime and lemon
Juice of one lemon
1 tsp. red pepper flakes
1/2 tsp. kosher salt

Combine all ingredients in saucepan over medium high heat, simmer 3 to 5 minutes, stirring until butter is melted.

Makes 1 cup

Sweet-n-Sour BBQ Glaze:

1/2 cup ketchup
1/2 dark corn syrup
2 Tbsp. cider vinegar
1 Tbsp. Dijon mustard
1 1/2 tsp. soy sauce
! Tbsp. unsalted butter

Combine ketchup, corn syrup, vinegar, mustard and soy sauce in a small saucepan over medium high heat. Simmer for 5 minutes. Remove from heat, then stir in butter until melted.

Makes 1 cup
