Since it’s so cold - it’s a good day for the oven to be on for a tummy-filliing meal that is very easy to prepare!
OVEN CHICKEN BREASTS: Chicken breasts coated with: fresh-made dry bread crumbs (from crusty Italian bread slices I dried), mixed with flour, paprika, kosher salt, finely minced onion, fresh minced parsely, finely minced garlic, fresh cracked black pepper, paprika and dried sage. Placed on oiled baking sheet and baked at 350* F. till done.
served with a basic casserole made from:
A mixture of cooked penne, spirals and bowties (not enough of any to make anything - so I combined them). While macaroni is draining, and using same pan - warm one can cream of chicken soup with 1/2 can milk and frozen peas; stir until soup is no longer lumpy; remove from heat; add macaroni and stir to combine. Place in casserole dish and top with bread cubes (made from Italian bread) and dotted with butter. Heat through in oven while chicken is baking.
and also a salad:
quartered plum tomatoes, sliced fresh mozzarrella drizzled with olive oil and sprinkled with fresh cracked black pepper and basil
and don’t forget the crusty Italian bread!
