Thyme and Garlic Roasted Turkey Breast

About six 3 oz. servings

2 tsp. minced fresh thyme
1 tsp. grated lemon rind
1/4 tsp. coarsely ground pepper
1/8 tsp. salt
2 garlic cloves, crushed
1 turkey breast half (about 2.25 lb)
Cooking spray
Thyme sprigs (optional)

Preheat oven to 400*. Combine first 5 ingredients in a small bowl. Loosen skin from turkey and rub thyme mixture over turkey; press skin to secure. Place breast half, skin side up, on a broiler pan coated with cooking spray. Insert meat thermometer into meaty part of breast, making sure not to touch bone. Bake at 400* of 1 1/2 hours or until meat thermometer registers 180*. Let stand 10 minutes. Remove and discard skin. Cut breast into thin slices; garnish with thyme sprigs, if desired.
